Where does your love of cooking come from?
I was a real nature child; my parents had goats, sheep and
a big garden. We made our own cheese, grew vegetables and
often spent time in the kitchen together. Playing quietly
with something was never for me; I preferred cooking with
my grandma.
You qualified as a chef and wanted to work in award-winning
restaurants. Today, you work in television. How did that come about?
Award-winning cuisine was my dream. But I didn’t like the
restaurant that I ended up at after graduating at all. So I gave
up cooking for the time being. I travelled a lot and studied.
I got into television through the entrepreneur and YouTuber
Fynn Kliemann, who is a friend of mine. We filmed cooking
videos in his yard in collaboration with the young people’s
channel “funk”, and I soon realised that I have a talent for
being in front of the camera.
You appear in multiple TV programmes, produce a podcast, run two
restaurants in Hamburg, and have written books. How do you keep
all those different plates spinning?
I have a lot of energy and I like it loud, fast and creative. In
that respect, I really enjoy the variety. And you know it
doesn’t all happen in one day. I write the books over several
months, or only film every six weeks, for example. And I have
an amazing team.
How important is healthy eating?
Extremely important. There are two sides to me: the chef
likes fat, butter, parmesan, olive oil and everything that makes
food taste good. In my personal life, I eat a lot of protein and
watch my calories. Two years ago, I lost 18 kilograms. When
you feel fit and healthy, you do better at work too.
The theme of this issue is “radiance”. What does inner radiance have
to do with nutrition?
It’s like this: you are what you eat. We all know how it is:
If you have just eaten macaroni and cheese, you feel extremely
satisfied in the moment. It tastes delicious and there’s
nothing wrong with that. But everyone knows how you feel
afterwards: as if you have a stone in your stomach. If, on the
other hand, you eat a balanced diet, you look more alert and
have a beautiful glow.
What’s your tip for getting that glow through your diet?
Lots of protein! Our bodies don’t store protein, so the
cells need a regular supply of it. You will really feel and see
the difference.
